Although sherry cask aging is arguably one of the characteristics of whiskey that is most frequently highlighted, it is often underappreciated. Sherry is a fortified wine made in Spain, as it is widely known. People are more familiar with the names of the principal sherry varieties, including Pedro Ximénez, oloroso, and fino (PX).

Palomino grapes make up more than 90% of sherry production. However, Moscatel or Pedro Ximénez grapes can also be used. Sherry is always at least three years old and is fortified with the impartial grape spirit after fermentation.

The Dalmore 18 Year is aged for four years in Matusalem Oloroso casks that are thirty years old. Oloroso is a dark, rich sherry that is frequently aged for many years. One of The Dalmore 18 Year's distinguishing characteristics is the Oloroso's richness.
