Description:
The taste of the virgin Chinquapin oak cask is immediately noticeable when you smell this whisky. Given how much flavor the Chinquapin oak casks would impart in just eighteen months, The GlenAllachie made a wise choice by finishing this expression for only eighteen months. Even an additional six months would result in an awkward bottling.
Personally, I find that there is a lot of heather honey on the nose, followed quickly by orange peel. There is also clove present. On the taste, it starts out malty and spicy with a faint sweetness. To avoid getting a mouthful of spice, give this some time to open up in the glass.
Orange zest and a faint undertone of sweetness return in the finish, which is warm and comforting. It's comparable to the sensation you get after eating candied orange peel on your palate.
With no point of reference, tasting The GlenAllachie 12 Years Old Chinquapin Oak Finish was intriguing. A few drops of water will work wonderfully to open this bottle if you don't have the luxury of time to savor it.
There are no approved meal pairings for The GlenAllachie, but that's okay because it's already such a delight. If you must eat it with food, dark chocolate is always a good choice, especially after supper. Give the lotus leaf-wrapped glutinous rice with the mushrooms, chicken thighs, and waxed sausage a try.
If you have a home bar setup, try using this instead of the standard bourbon or rye whiskey in a Manhattan for a unique taste.
