There was some excitement when Wolfburn, a small, new distillery in Scotland's far north, launched its first whisky in 2016. I pondered where this initial success would go after receiving positive feedback. Wolfburn, though, hasn't really managed to top their early success, which is unfortunate.
But I'll still sample their whisky despite that. The Wolfburn Small Batch No. 375 is the next item. This unpeated spirit, which is only available in 5,500 bottles, was aged for about four years in a mix of half-size (100 liters) first-fill bourbon barrels and second-fill Oloroso sherry hogsheads. Early in 2019, it was made available.
Vanilla-bomb aroma. At least initially. After a time, when something finally happens, Honey takes control. Apple peel, cherry, and sultana notes are also evident, although oaky undertones are quite pervasive. Additionally, soft flowery scents.
Initially creamy in taste with subtle hints of apple and vanilla custard, followed soon by tannins and bitterness from oak, as well as cloves and coconut flakes.
The finish has honey, caramel-glazed apple, and a hint of sweetness. Small to medium in size.
On the palate, there isn't really enough balance because the spices and oak overpower it too strongly. It does make up for the lack of depth at the conclusion, but that doesn't last long enough. Not Wolfburn's strongest effort.
