Is the whisky's peppery and slightly oak-forward flavor because I am aware of the type of cask it was aged in? Maybe, but I don't think so. This whisky is unquestionably heavily influenced by the cask, even though its youth occasionally emerges, particularly in the scent. Although it seems strange, the Glenallachie Wood Finish Series is my favorite because of this unusual combination.

In 2018, The GlenAllachie released its primary line of single malt whiskey to the market. The distillery's former ownership changed in 2017 when a company led by renowned Billy Walker of BenRiach purchased it. The new core range heavily emphasized rebranding and linearly released age statements:

Ages 10, 12, 15, 18, and 25. All new releases use the standard scotch maturation formula of virgin oak, bourbon, and sherry casks. Due to the brand's success, in the summer of 2019, it debuted a new side series of age-statement products that focused on various wood treatments.

A 10-year-old with a port wood finish, a 12-year-old with a Pedro Ximenez finish, and an 8-year-old with a Koval Rye whiskey barrel finish are all part of the "Wood Finish" line of new releases. The Koval 8yo, the youngest competitor, will be examined in this section. The 18-month aging of this GlenAllachie spirit, which was bottled at 48% ABV, took place in quarter cask barrels from the Chicago-based distillery Koval, which had previously held its distinctive organic rye whiskey.

Its nasal aroma is accompanied by ripe banana, nutmeg, cinnamon, a splash of oak shavings, and honey in porridge. There are also very faint hints of fudge and sour beer. It has a tongue with a texture that is a little bit greasy and thin at the same time. Moderately spicy Try to visualize a combination of black pepper, a touch of cinnamon, ginger, and cloves. There are more wood shavings and a green banana scent.

The final bite includes lingering spice flavors. Broccoli. Finally, a sudden whiff of smoke. This Speyside single malt was produced at the Glenallachie distillery and matured in barrels made of American oak before being completed in quarter casks that had previously held rye whiskey from the Chicago-based Koval distillery.

The final product is a rich, sweet single malt with a combination of honey, butterscotch, cinnamon, nutmeg, and peppery, green flavors. Additionally, it offers a wholesome burst of fresh rye spice.
